Eileen Gibney
Eileen Gibney (BSc, PhD, MSc) is a Lecturer in Nutrition and Genetics in University College Dublin. Her current research interests lie in personalised nutrition. Eileen Gibney has successfully obtained over 2.3M funding for several research projects including: Examination of the effect of genotype (PTC/PROP) on fruit and vegetable intake in children, Food for Health Ireland, Consumer Understanding of Portion Size and DietIreland: development of an online dietary assessment tool (DAFM 2013).
She is also a collaborator in several other research projects such as Joint Irish Nutrigenomic Organisation (JINGO). Eileen is also a PI on the foo4me project, a €9M project involving an international consortium of researchers focused on personalised nutrition.
Other research areas of interest for Eileen include functional effects of novel foods, evident by her involvement in both FHI1 and FHI2, and the nutrient - epigenetic relationship. She is Head of Subject Nutrition, a member of the School of Agriculture and Food Science Executive Committee and Chair of the UCD Institute of Food and Health Executive Committee.
